Minestrone soup
Minestrone is a thick soup of Italian origin made with vegetables, often with the addition of pasta or rice. Common ingredients include beans,onions, celery, carrots, stock, and tomatoes.
There is no set recipe for minestrone, since it is usually made out of whatever vegetables are in season. It can be vegetarian, contain meat, or contain a meat-based broth (such as chicken stock). Angelo Pellegrini, however, argued that the base of minestrone is bean broth, and that Roman beans (also called Borlotti beans) "are the beans to use for genuine minestrone"
Minestrone is one of the cornerstones of Italian cuisine, and is almost as common as pasta on Italian tables.
How to make
Indredients required: for 10 portion
50ml.olive oil do not use extra virgin
100gm carrot cut into 1cm dices
100gm zuchinni cut into 1cm dices
100gm potato cut into 1cm dices
100gm onion cut into 1cm dices
50gm leeks cut into 1cm dices
50gm broccoli cut into fllorets
50gm cauliflower cut into florets
200gm tomato cut into 1cm dices
2 litre stock made from trimming of above vegetable
salt,pepper to taste
Method
- wash all the vegetable and prossesed as above.
- heat olive oil saute without coloring add chooped garlic,diced potato and carrotcover it with a butter paper and allow to cook it for 15 to 20 mins.
- Now add onions and leeks with 50ml of stockand stew again with butter paper.
- now add zucchini and tomato again stew.
- Add left over vegetable stock and vegetables alsoo and cook it for 15-20 mins.
- Then add 50ml of tomato puree.
- check seasonings.
- serve in a soup bowl with deep fried bread called as crutons.
